INGREDIENTS:

800g diced lamb
1 celery stick ( cubed )
1 onion ( cubed )
1 carrot ( cubed )
1 reddish pepper ( seeded and chopped )
2 cloves garlic
1 teaspoonful earth fennel
1/2 teaspoonful earth cumin
1 teaspoonful fresh rosemary ( chopped )
1 teaspoonful fresh chopped thyme
1 embayment leafage
1 tablespoonful tomato paste
1/2 cup crimson vino
400g can chopped tomatoes
1 1/2 cups beef or chicken broth
1/2 cup fresh Parmesan cheese ( grated )

Papardelle pasta
1 tablespoonful butter or superfluous virgin olive oil
fresh Parmesan

DIRECTIONS:

Premix the flour with a bit salt and pepper so flips in the lamb to dust.

Heat the oil in a big heavy casserole pan over a medium low heat. Agitate forth any extra flour from the lamb pieces so fry in little batches to brown on all sides. Lay aside. Reiterate with all the lamb. In the same pan add the celery, onion and carrot and Fry gently for 6 transactions until softened. Add the pepper, garlic, fennel, cumin, rosemary and thyme and embayment foliage and splash for 1 min. Add the vino and simmer for 30 seconds so add the the tomato paste, tinned tomatoes and so stock and bring back a simmer. Cut the heat to moo, cover the pan and simmer gently for 2 1/2 hrs until the meat is rattlingly tender. Take from the heat so add the Parmesan and splash in until runned before functioning.

Cook the papardelle to the parcel directions. When ready, drainage so return to the cooking pan along with the butter and roughly 4 functioning spoons of the lamb sauce. Splash goodly so plate upward.

Portion:

Function each functioning with a spoon of sauce over the top and a scattering of fresh Parmesan.
